This is my fool proof spicy vegetable pasta. If I am feeling hungry and lazy this is the perfect balance of effort and yum. It only takes about 5 minutes of preparation and 20 minutes of cooking, so it finds it's way to your plate quickly!
You will need:
- 2 Zucchinis (Have I mentioned how much I love zucchini?)
- 8 medium mushrooms
- 8 largish tomatoes
- 1 onion
- 3 large cloves garlic
- Water
- Dried chilli flakes
- Dried basil (and fresh)
- Salt
In a food processor, whiz up the tomatoes and garlic until very pureed.
Dice onion and add to pan with a small amount of oil. When the onions start to soften, halve the mushrooms and add to pan to brown.
Thinly slice the zucchini and add to pan to soften along with chilli flakes to suit your tastes. Add pureed tomatoes and garlic, turn heat down and simmer for 15-20 minutes until sauce has reduced.
Serve with pasta (spaghetti is my fav!)
This sauce would serve 2-4 peeps depending on whether you want seconds, and you probably will.
