
Eating healthy food can sometimes feel like you are depriving yourself, but I try to slip in a few super healthy treats like these yummy, fruity hotcakes. They are so tasty, but if you are used to high sugar foods then they might not hit the spot. I try to maintain a sugar free diet, though lately I have been failing at this. Despite my recent slackness, fruit seems very sweet to me. Since I took these photos I have completely cut dairy out so I would substitute soy yoghurt. These are so filling, I can never manage more than one!





You will need: (makes 4-5)
- 1 cup wholewheat self raising flour
- 1 egg
- 1 cup soy milk/water (cows milk would be fine)
- 1 tsp baking powder/bicarb soda
- 1 tsp vanilla essence
- 1 cup frozen or fresh blueberries
- Oil for cooking (Coconut oil makes these so amazing and it is incredibly good for you, but rice bran oil would also be good)
- Yoghurt for serving
- Optional: you can add a handful of raw oats or LSA to up the protein or psyllium husks for added fibre
To make:
- combine all dry ingredients in bowl and mix well
- mix wet ingredients (not blueberries!) in a separate bowl then combine with dry. You should have a fairly runny consistency but if you feel it is too thick add a small amount of water
- Optional-leave batter in fridge for a couple of hours to get the rising agent working
- Heat pan with a small amount of chosen oil and pour a ladle full of mixture into hot pan
- Wait until bubble start to form around the edges and centre of the hotcake then add a sprinkling of blueberries. Leave for a few seconds then flip!
- Cook until berries have softened and all batter is cooked. These can take longer than non fruity hotcakes, but they are worth the wait!
- Serve with yoghurt

YUUMMMMYYYY! Treat yo self! LOL That's what I tell people when they feel guilty about eating that cake or buying that purse. I'm a bad friend in that way. I'm such an enabler. LOL I never like to say no. Have you ever watched Parks and Recreation? Well, that's where I got "treat yo self" slogan.
